A New (Old) Frontier in New Mexico


Staying at a downtown hotel in Albuquerque afforded me easy access to the surroundings that make up the University of New Mexico campus.  The strip on Central is typical of a downtown, campus-supported area:  bars, cheap eats, etc.  Turns out a legendary place is smack-dab across the street from the school's main entrance. 

Frontier is the kind of place where generations and mingle easily and comfortably, any and all socio-economic and/or cultural differences set aside in favor of the honest, simple food served under the conspicuous yellow barn roof.

This spot has been so popular, in fact, that it now occupies an entire city block, having expanded over the years to engulf shops and eateries that have come and gone.

Frontier is open all day and night (5am-1am) and is apparently known for their own take on a sweet roll (appropriately named the Frontier Sweet Roll), but I was there for dinner... an authentic New Mexican dinner.  Which is why I ordered the Frontier Burrito. Now, if you've never been through New Mexico, or the Southwest in general, you've never truly experienced the beauty of the Green Chile.  It has an umami-like
quality, which is to say, there's something indescribable and unique that sets it apart from other chiles.  Hot but not fiery, it speaks to my taste buds in a way no other spicy food does.  And it's a common ingredient in EVERYTHING served in New Mexico.  Everything! 

So it was with my Frontier burrito, stuffed with beef, beans, and a green chile stew, along with the aforementioned chiles (you thought I was kidding?).  This is old-fashioned, no-frills food... and I loved how the menu has a section reserved exclusively for "New Mexican Food."  Not "Mexican," "NEW Mexican."  There is a difference.  And I tasted it in all it's simple, savory glory, at Frontier.

Albu-Quirky

I've been to Albuquerque a number of times, and stay at the same hotel in Old Town. Why? Because of one thing: their restaurant's Blue Cornmeal Pinon Pancakes. If you've never had cornmeal pancakes of any type, you should seek them out or try making them yourself. But the pancakes at the Hotel Albuquerque surpass just about any I've sampled. This is a breakfast that falls more to the side of savory than sweet. The cornmeal base give the pancakes a heft to them, and just a bit of crisp to the edges -- almost brulee-like -- while still remaining moist. Adding the pine nuts is a welcome change from the usual standard fare toppings. In this instance, I refrain from all butter, and only sparingly use the syrup. It should serve as nothing more than an enhancer...

And while on the subject of Albuquerque and quirky... major shout out to the great folks at Grandma's K & I Diner, near downtown, but off the beaten path. As luck would have it, some production friends of mine were in town shooting an episode of a food show (that shall at this moment remain nameless), so I met up with them there.

The staff is super-friendly. The food is legit, and the portions are GINORMOUS! (maybe that's a giveaway as to what show was taping there)...

Travels...Musings... & More

So I'm in the top 20 finalists for this online cooking reality series (www.homecookingstar.ning.com/group/richhollenberg), whose topic this inaugural season is BBQ recipes. I entered one whose most provocative ingredient is Dr. Pepper. I in no way take credit for this: that goes to a chef friend (and James Beard nominee) Zack Gross, of Z-Grille, in St. Pete. I had also seen Dr. Pepper featured in "Top Chef" a while back.
But, the recent influx of Dr. Pepper sightings on TV and in food blogs, etc. is becoming almost ridiculous! It was featured again on TV, this time by both Graham Elliot Bowles and Susanne Tracht on "Top Chef Masters" this past Wednesday night, and no sooner do I catch that on the DVR, than I read about Dr. Pepper ribs on the NY Magazine food blog, "Grub Street." It's everywhere!! Maybe that "23 secret ingredients" campaign really worked....

In the midst of a foodie media tour, travelling to 10 different markets to give tips on BBQ/grilling season. One of the most pleasant surprises was Albuquerque, NM. Stayed at a fab hotel right on the cusp of Old Town (Hotel Albuquerque), and visited 3 spots that I would recommend to anyone: Seasons appears to be the most contemporary, hip, fine dining you'll find in the area, and the 2nd floor views are breathtaking, as is the menu, and the wine and beer list (as I'd hoped, lots of west of the Mississippi microbrews on tap)... Little Anita's is almost stereotypically New Mexican, but don't ever ever ever call in TexMex! The dishes looked the same, but the taste was miles beyond what we're used to... next day, had lunch at Church St. Cafe, which occupies the oldest standing building recorded in Albuquerque. Exactly what you want from this type of town: rustic, charming, brimming with local ingredients (I ordered (and loved) the Pueblo Burger).
My two favorite takeaways from this 24-hour stopover: blue corn pancakes, topped with pine nuts, and a peach-maple syrup for breakfast... and Indian fry bread (which is what my Pueblo Burger was served on). Also, be prepared to sample fresh green chile on...everything! It's as common there as any condiment you can think of. All in all, outrageously simple, good, locavore-inspired food, and the people are kind and welcoming, too...

Does anyone have any grilling/BBQ tips they'd want to share, that I can then suggest on my tour (I'd give you credit for it on TV!)?? If so, make sure to comment...

Been to Nashville once before and encountered (I swear) the best pizza joint outside NYC... Christopher Pizza -- funky, fun, and fresh made, original 'za with such creative toppings and combos... Love the fact that even though I won't get to the French Quarter, I can still get a Cafe DuMonde fix (in Metairie) -- gotta love the chicory and bignets...


I must say it is with a heavy heart that I write this latest entry. The patriarch of the Hollenberg family, my Papa Harry, passed away Thursday. He will be missed and remembered fondly by so many friends and family members. And my 2 sons and I carry on his good name proudly...
